Choc Chip Cookies

Serves: 12 cookies | Difficulty: Easy
Prep Time: 5-10mins | Cook Time: 15-17mins |Total Time: 25ish mins


  • 250g plain flour
  • 1⁄2 teaspoon bicarbonate of soda
  • 1⁄2 teaspoon salt
  • 170g unsalted butter, melted
  • 200g dark brown soft sugar
  • 100g caster sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 325g chocolate chips


  1. Preheat the oven to 170c
  2. Line baking trays with parchment paper
  3. Sift together flour, bicarbonate and salt (I just usually add them to a bowl and stir with a whisk)
  4. Cream together melted butter, brown sugar and caster sugar until well blended. Beat in vanilla, egg and egg yolk until light and creamy.
  5. Mix in the sifted ingredients until just blended, then stir in the chocolate chips.
  6. Drop dough onto trays (each cookie around 4 tsp) about 8cm apart.
  7. Bake for 15-17 mins, or until edges are lightly toasted.
