Layered Chicken and Potato Pie

Serves: 4 | Difficulty: Medium
Prep Time: 5 mins. | Cook Time: 1 hour 30mins |Total Time: 1 hour 30-35 mins.

Ingredients:

  • Chicken (left overs)
  • 1 large Onion
  • 2 Mushrooms
  • 2 pieces of Bacon
  • 2 cloves of Garlic
  • 4-5 Potatoes
  • Mixed herbs and black pepper
  • Cheese sauce

Method:

  1. Pre heat the oven 180c (fan assisted, 200c for non-fan.)
  2. Grease an oven proof dish with butter and layer it with slices of potato.
  3. Dice and fry the onions, mushrooms and bacon.

  4. Add some garlic and herbs. Mix the chicken into this and season with salt and pepper.

  5. Spoon the chicken mixture over the potatoes, add another layer of potatoes and pour the cheese sauce over it all.

  6. Put it in the oven for about 1 hour and a half or until potato is cooked. Sprinkle with cheese and you’re done.

Notes:

This is a good one for using left over chicken. It’s also nice with slices of beef tomato over the top in amongst the sauce before sprinkling the cheese on it. This is a very nice warming dish, which you can use up a lot of bits of left overs in. I would serve this with green veggies rather than salad but I’m sure it would go with that too.
